Quick and Easy Banana Breakfast Cookies

They’re vegetarian, not vegan. Yes, the originalrecipe calls for an egg. But I did put the option beside the original recipe for a plant based egg substitute for people who do want a vegan recipe (yay!).

You do get to skip the dairy though, and use almond milk, as suggested.

And as I’m currently collecting family friendly healthy and yummy recipes, I thought I’d post this one here, to share.

To make these delicious breakfast cookies for you and your family, here is the recipe.

Banana Breakfast Cookies Recipe

3 bananas, mashed

2 cups quick cooking oats

⅓ cup applesauce

1 egg, or an egg based substitute if you’d prefer to go vegan

¼ cup almond milk

¼ cup raisins

½ cup chopped walnuts

1 teaspoon pure vanilla extract

1 teaspoon cinnamon

½ cup chocolate chips (optional)

A lot of these items you can grab off Amazon, either from the Amazon Pantry or Amazon Fresh, if it’s offered in your area! That way you can have them shipped to your door, if you don’t already have them on hand.

How to Make Banana Breakfast Cookies

To make the cookies, it’s really simple. Don’t you love quick and easy- and simple? I know I do.

First, preheat the oven to 350.

Mix everything. Yes, everything. 

Then place by the heaping tablespoon on a parchment lined pan, and press with a fork.

Bake 15-18 minutes, until lightly browned.

Remove from oven and cool completely.

And voila! As simple as that.

These banana breakfast cookies can be stored in the fridge for up to 4 days, but can be frozen for up to 4 months.


What’s great about these banana breakfast cookies is not only are they quick, easy, and affordable- because, let’s face it, most of the ingredients are staples we have on hand. But these are so delicious, they can be eaten any time, not just breakfast.
